Manufacturing Process
The industrial ice cream process follows a defined sequence of unit operations. Each stage has a clear purpose, input materials, equipment and quality impact.
- Mixing / Mix Preparation – Liquids (milk, cream, water) are charged into a stainless-steel mixing tank (typically 1 000–5 000 L, SS 316) and heated to approximately 40 °C. Powders (sugar, milk powder, stabilizers, emulsifiers) are added gradually under continuous agitation.
- Pasteurization – Mix is rapidly heated to 80–85 °C, held for approximately 25 seconds, then cooled in a plate pasteurizer (500–5 000 L/h).
- Homogenization – Hot mix is forced through a two-stage high-pressure homogenizer at 150–200 bar to reduce fat-globule size.
- Aging – Mix is cooled to 2–4 °C and held for a minimum of 4 hours (ideally 12–24 hours) to allow fat crystallization and stabilizer hydration.
- Flavor and Color Addition – Approved flavors and colors are incorporated uniformly.
- Continuous Freezing and Aeration – Mix is pumped into the continuous freezer; dasher scrapes the freezing surface while air is injected (typical overrun 50–100 %). Outlet temperature approximately –5 to –6 °C. Capacity 500–3 000 L/h.
