The yogurt is homogenized at 50-55°C and 2 bar. Dry matter is increased to 18-19% using a Quark separator. Salt (0.8-1%) and whey powder (1-2%) are added and the mix is heated at 88°C for 10 minutes. After cooling to 55°C the product is packaged and stored at 4°C. For dry kashk a spray dryer is used.
