Baguette Production Line and Factory Setup

A baguette production line is a complete industrial system designed to mix, form, proof and bake traditional and industrial baguettes under controlled process conditions. The line produces long crusty loaves for retail and food-service markets.

From an industrial perspective, baguette manufacturing is important because it combines precise dough development, accurate forming to length and weight, controlled proofing and reliable baking to achieve the characteristic crust, open crumb and flavour. The process relies on a defined sequence of unit operations that must be correctly engineered, sized and integrated.

Primary materials typically include flour, water, yeast, salt and sugar. The core machinery set consists of spiral mixers, baguette formers (length up to 600 mm, 50–1000 g), provers, tunnel or rotary ovens (200–250 °C) and packaging machines.

The Industrial Department supports investors who want to establish a new baguette plant as well as existing operators who need repair, overhaul, capacity expansion or automation of their current lines. Projects can start from an empty site or from an operating facility that requires technical upgrading.

Whether the goal is a green-field turnkey bakery plant in Iraq, Kurdistan Region, Afghanistan or other regional markets, or the modernization of an existing line in Iran, engineering, machinery supply or manufacturing, installation, commissioning and ongoing technical support can be provided under defined contractual scopes.

Production Line Overview

The baguette line is engineered as an integrated process system covering dough mixing, bulk fermentation, forming, intermediate and final proofing, baking, cooling and packaging. Design capacity is determined during the engineering phase and can typically range from 1200 to 54000 pieces per hour depending on equipment.

Main machinery groups include spiral mixers, baguette formers, provers, tunnel or rotary ovens and packaging machines. Supporting infrastructure covers electrical power, gas and process water.

Manpower requirements depend on the degree of automation. Quality control covers length, weight, crust and crumb structure.

Manufacturing Process

  1. Dough Mixing – Ingredients are mixed in a spiral mixer.
  2. Bulk Fermentation – Dough is allowed to ferment.
  3. Forming – Dough is formed into baguettes (length up to 600 mm, 50–1000 g).
  4. Intermediate and Final Proofing – Dough pieces are proofed.
  5. Baking – Baguettes are baked at 200–250 °C.
  6. Cooling and Packaging – Product is cooled and packed.

Machinery & Equipment

  • Spiral Mixer – Develops the dough. Position: first stage. Importance: gluten development. Quality impact: incomplete mixing affects volume and texture. Maintenance: bowls, hooks and drives. Sahi Rasa support covers design, installation, repair and spare parts.
  • Baguette Former – Shapes the dough to length and weight. Position: after bulk fermentation. Importance: dimensional accuracy. Quality impact: inaccurate forming causes weight and length variation. Maintenance: rollers, belts and controls.
  • Prover – Controls final fermentation. Position: before baking. Importance: volume and flavour. Quality impact: incorrect proofing affects final quality. Maintenance: humidity and temperature systems.
  • Tunnel or Rotary Oven and Packaging Machine – Bakes and packs the product. Position: end of line. Importance: crust quality and shelf life. Quality impact: incorrect baking profile affects colour and moisture. Maintenance: burners, belts and sealing systems.

Factory Layout & Building Requirements

Typical areas include raw-material storage, mixing, forming and proofing, baking, cooling, packaging, quality control, utilities and staff facilities. Exact area is determined during engineering.

Utilities

  • Electricity: 380 V three-phase, 50–100 kW
  • Gas: 50–100 m³/h
  • Water: 5–15 m³/day
