Bulk and Fancy Bread Production Line and Factory Setup
A bulk and fancy bread production line is a complete industrial system designed to mix, ferment, form, proof and bake bread under controlled process conditions. The line produces bulk loaves, baguettes and specialty breads depending on the selected forming and baking equipment.
From an industrial perspective, bread manufacturing is important because it combines precise dough development, controlled fermentation, accurate forming and reliable baking to achieve consistent volume, texture and crust. The process relies on a defined sequence of unit operations that must be correctly engineered, sized and integrated.
Primary materials typically include flour, water, yeast, salt, sugar, oil and improvers. The core machinery set consists of spiral mixers, baguette formers, rounders, intermediate provers, final provers, rotary or deck ovens (200–250 °C) and optional slicers.
The Industrial Department supports investors who want to establish a new bakery plant as well as existing operators who need repair, overhaul, capacity expansion or automation of their current lines. Projects can start from an empty site or from an operating facility that requires technical upgrading.
Whether the goal is a green-field turnkey bakery plant in Iraq, Kurdistan Region, Afghanistan or other regional markets, or the modernization of an existing line in Iran, engineering, machinery supply or manufacturing, installation, commissioning and ongoing technical support can be provided under defined contractual scopes.
Production Line Overview
The bread line is engineered as an integrated process system covering dough mixing, bulk fermentation, dividing and forming, intermediate and final proofing, baking and packaging. Design capacity is determined during the engineering phase.
Main machinery groups include spiral mixers, formers, rounders, provers, ovens and packaging machines. Supporting infrastructure covers electrical power, gas and process water.
Manpower requirements depend on the degree of automation. Quality control covers volume, texture, crust colour and package integrity.

Manufacturing Process
- Dough Mixing – Ingredients are mixed in a spiral mixer.
- Bulk Fermentation – Dough is allowed to ferment.
- Forming – Dough is divided, rounded and shaped (baguette former, etc.).
- Intermediate and Final Proofing – Dough pieces are proofed.
- Baking – Bread is baked at 200–250 °C in rotary or deck ovens.
- Cooling, Slicing and Packaging – Product is cooled, optionally sliced and packed.
Machinery & Equipment
- Spiral Mixer – Develops the dough. Position: first stage. Importance: gluten development. Quality impact: incomplete mixing affects volume and texture. Maintenance: bowls, hooks and drives. Sahi Rasa support covers design, installation, repair and spare parts.
- Former, Rounder and Provers – Shape and ferment the dough. Position: mid-line. Importance: shape accuracy and volume. Quality impact: incorrect proofing affects final quality. Maintenance: belts, moulds and humidity controls.
- Rotary or Deck Oven – Bakes at 200–250 °C. Position: core stage. Importance: crust and crumb quality. Quality impact: incorrect temperature profile affects colour and moisture. Maintenance: burners, decks and controls.
- Slicer and Packaging Machine – Finish and pack the product. Position: end of line. Importance: presentation and shelf life. Quality impact: incomplete packing causes staling. Maintenance: blades and sealing systems.
