Dried Vegetable Production Line and Factory Setup
A dried vegetable production line is a complete industrial system designed to wash, cut, blanch, dry and pack fresh vegetables under controlled hygienic and process conditions. The line produces dried or powdered vegetables depending on the selected drying and milling equipment.
From an industrial perspective, vegetable drying is important because it combines gentle washing, precise cutting, controlled blanching and low-temperature drying to preserve colour, flavour and nutritional value while achieving long shelf life. The process relies on a defined sequence of unit operations that must be correctly engineered, sized and integrated.
Primary materials typically include fresh vegetables, process water, optional salt or citric acid and packaging materials. The core machinery set consists of washing systems, centrifuges, cutters, blanchers, tunnel or cabinet dryers, mills, sieves and packaging machines.
The Industrial Department supports investors who want to establish a new dried vegetable plant as well as existing operators who need repair, overhaul, capacity expansion or automation of their current lines. Projects can start from an empty site or from an operating facility that requires technical upgrading.
Whether the goal is a green-field turnkey drying plant in Iraq, Kurdistan Region, Afghanistan or other regional markets, or the modernization of an existing line in Iran, engineering, machinery supply or manufacturing, installation, commissioning and ongoing technical support can be provided under defined contractual scopes.
Production Line Overview
The dried vegetable line is engineered as an integrated process system covering reception, washing, cutting, blanching, drying, optional milling and packaging. Design capacity is determined during the engineering phase and can typically range from 500 to 2000 kg of finished product per day depending on vegetable type and moisture target.
Main machinery groups include vibrating washers, centrifuges, industrial cutters, blanchers, tunnel or cabinet dryers, mills, sieves and packaging machines. Supporting infrastructure covers electrical power, gas or steam and process water.
Manpower requirements depend on the degree of automation. Quality control covers residual moisture, colour, microbial load and package integrity.

Manufacturing Process
- Reception and Washing – Fresh vegetables are received and washed in vibrating washers.
- Dewatering – Excess water is removed by centrifuge.
- Cutting – Vegetables are cut to the required size.
- Blanching – Product is blanched at 85–95 °C for 2–5 minutes.
- Drying – Moisture is reduced in tunnel or cabinet dryers at 50–70 °C.
- Optional Milling and Sieving – Product may be ground and sieved.
- Packaging – Finished product is packed.
Machinery & Equipment
- Vibrating Washer – Cleans vegetables. Position: first stage. Importance: hygiene foundation. Quality impact: residual soil affects final quality. Maintenance: screens and water systems. Sahi Rasa support covers design, installation, repair and spare parts.
- Centrifuge – Removes excess water. Position: after washing. Importance: efficient drying. Quality impact: residual water increases drying time. Maintenance: baskets and drives.
- Industrial Cutter – Cuts to size. Position: after dewatering. Importance: uniform drying. Quality impact: uneven pieces dry inconsistently. Maintenance: knives and feeds.
- Blancher – Heat-treats at 85–95 °C. Position: before drying. Importance: enzyme inactivation and colour retention. Quality impact: incorrect temperature or time affects colour. Maintenance: heating system and conveyors.
- Tunnel or Cabinet Dryer – Dries at 50–70 °C. Position: core process stage. Importance: determines residual moisture and capacity. Quality impact: over- or under-drying affects quality and shelf life. Maintenance: fans, heaters and controls.
- Mill, Sieve and Packaging Machine – Optional size reduction, classification and packing. Position: end of line. Importance: final product format. Quality impact: incomplete packing affects shelf life. Maintenance: screens, mills and sealing systems.
