Fruit Compote Production Line and Factory Setup

A fruit compote (canned fruit) production line is a complete industrial system designed to wash, peel, pit, blanch, fill and sterilize fruit in syrup under controlled hygienic and thermal process conditions. The line produces canned fruit compotes in metal cans or glass jars.

From an industrial perspective, compote manufacturing is important because it combines careful fruit preparation, controlled blanching, accurate filling with syrup, hermetic seaming and reliable sterilization to achieve commercial sterility, consistent quality and long shelf life. The process relies on a defined sequence of unit operations that must be correctly engineered, sized and integrated.

Primary materials typically include fresh fruit (apple, pear, peach, etc.), sugar, water, citric acid and packaging materials. The core machinery set consists of washers, peelers, pitters, blanchers (85–95 °C), fillers (100–200 cans/min), exhausters, seamers, autoclaves and labelers.

The Industrial Department supports investors who want to establish a new compote plant as well as existing operators who need repair, overhaul, capacity expansion or automation of their current lines. Projects can start from an empty site or from an operating facility that requires technical upgrading.

Whether the goal is a green-field turnkey compote plant in Iraq, Kurdistan Region, Afghanistan or other regional markets, or the modernization of an existing line in Iran, engineering, machinery supply or manufacturing, installation, commissioning and ongoing technical support can be provided under defined contractual scopes.

Production Line Overview

The fruit compote line is engineered as an integrated process system covering washing, peeling and pitting, blanching, filling with syrup, exhausting, seaming, sterilization and labelling. Design capacity is determined during the engineering phase and can typically range from 5000 to 20000 cans per day.

Main machinery groups include washers, peelers, pitters, blanchers, fillers, seamers, autoclaves and labelers. Supporting infrastructure covers electrical power, steam and process water.

Manpower requirements depend on the degree of automation. Quality control covers fill weight, vacuum, sterility and package integrity.

Manufacturing Process

  1. Washing – Fruit is washed.
  2. Peeling and Pitting – Skin and stones are removed.
  3. Blanching – Fruit is blanched at 85–95 °C for 3–5 minutes.
  4. Filling – Cans are filled with fruit and syrup (100–200 cans/min).
  5. Exhausting and Seaming – Air is removed and cans are sealed.
  6. Sterilization – Product is sterilized in autoclaves.
  7. Labelling and Packaging – Labels are applied and secondary packaging is completed.

Machinery & Equipment

  • Washer, Peeler and Pitter – Prepares the fruit. Position: first stages. Importance: yield and appearance. Quality impact: incomplete peeling or residual stones reduce quality. Maintenance: knives, conveyors and water systems. Sahi Rasa support covers design, installation, repair and spare parts.
  • Blancher – Heat-treats fruit at 85–95 °C. Position: after preparation. Importance: enzyme inactivation and texture. Quality impact: incorrect temperature or time affects colour and firmness. Maintenance: heating system and conveyors.
  • Filler and Seamer – Fills and seals cans. Position: core packaging stage. Importance: fill weight and hermetic seal. Quality impact: incomplete seal causes spoilage. Maintenance: dosing systems and seaming rolls.
  • Autoclave and Labeler – Sterilizes and labels the product. Position: end of line. Importance: commercial sterility and presentation. Quality impact: incorrect sterilization affects safety. Maintenance: pressure vessels, valves and applicators.

Factory Layout & Building Requirements

Typical areas include fruit reception, washing and preparation, blanching, filling and seaming, sterilization, packaging, quality control, utilities and staff facilities. Hygienic zoning is essential. Exact area is determined during engineering.
